This is my grandmother's recipe for roasted chicken. We are German and she or he wont to roll in the hay this manner all the time. I never have had a chicken this juicy before; this tiny trick works and makes the people eating it go silent. It's funny. We nibble on the celery after.
Ingredients:
2 whole chicken, giblets removed
add some salt and black pepper to taste
2 tablespoon onion powder, or to taste
half cup of margarine, divided
2 stalk celery, leaves removed
Directions:
Step 1:
Preheat oven to 365 degrees F ..
Step 2:
Place some chicken in a roasting pan and season generously inside and out with some salt and pepper. Sprinkle its insides and outside with onion powder. Place 4 tablespoons of margarine in the chicken cavity. Arrange the dollop of the remaining margarine in the chicken's exterior. Cut the celery into 4 or 5 pieces: and place it in the chicken cavity.
Step 3:
Bake it uncovered 1.30 hour in the preheated oven; to a minimum internal temperature of 170degrees F . Remove it from heat; and baste with melted margarine and drippings; Cover it with aluminum foil, and allow to rest about 20 minutes before serving.
